Ladolemono (Lemon-Garlic Vinaigrette) (Master Recipe)

(makes 1½ cups)
Classic Greek flavor principle:
Ingredients:
- 2 large garlic bulbs (approx 24 cloves), minced
- 1 cup extra virgin olive oil
- Juice of 4 fresh lemons (about ½ cup)
- 2 teaspoons dried oregano (or 2 tablespoons fresh oregano, finely chopped)
- 1 teaspoon coarse ground black pepper
- Salt to taste
Procedure:
- Briefly saute garlic in olive oil (about 1 minute)
- Combine all other ingredients
- Use as salad dressing or marinade for any Mediterranean-style dish
